

Obviously, this only happens on weekends (if at all). However, tomorrow’s Friday, so despite my inexcusable absence from the blog this week, I’ve decided to share one of my favorite weekend breakfast recipes* in anticipation of the weekend!
* I say recipe, but this is really a mish-mash of things I had in my fridge. No real measuring or prep required!

This breakfast comes together in minutes, and can be made using almost any leftovers that may be sitting in your fridge. All you really need are eggs and a few other veggies/meats to throw in along the way.
For this breakfast I used:
– leftover chicken sausage, sliced
– leftover cherry tomatoes
– diced onion
– leftover boiled red potatoes
– rosemary from the garden
That’s it!

In a large frying pan or skillet, begin by browning the onions and potatoes with a little bit of olive oil, followed by the diced sausage. Once they’re all toasty and starting to caramelize a little, push your ingredients to one side of the pan, and slowly crack in your eggs.
Cook to desired style (I went with scrambled this morning, but you can make your eggs however you like). Season with salt, pepper, and chopped rosemary.

Set the table, crack open a window, and enjoy!




Then just sit back, relax, and enjoy those precious weekend days.
School’s started again, so you’re going to need some peace and quiet (sob!).
